蒸蛋糕

工具:
1) 10吋的蒸籠 1個(或8吋掃油的糕盤)
2) 蒸籠紙(baking paper)

小貼士:
蒸好後的蛋糕,非常軟綿。隔天吃,可以再蒸熱,質感回復軟綿。

  1. 將大盤放在另一小鍋暖水上,盤底不要接觸到水
  2. 將雞蛋打入大盤內,砂糖分多次逐少加入,以電動攪拌器拌勻
  3. 攪勻後加入另一隻雞蛋和砂糖(注意盤不要太熱,只需暖暖就可以,以免煮熟雞蛋
  4. 重覆(2)及(3)把所有雞蛋和糖用高速攪勻約5-7分鐘,直至體積膨脹及顏色發白。以攪拌器提起少許麵糊,約等3秒才滴下一滴來, 以測試糊漿杰身程度
  5. 將糊漿加入雲呢拿香油,把鹽拌入低筋麵粉,分三至四次篩入,輕輕拌勻
  6. 鋪紙(baking paper)在蒸籠中,後後把麵糊倒進蒸籠中,以大火隔水蒸約30分鐘。用竹籤插入蛋糕,如沒麵糊黏著,即是熟透,便可食用
