乾酵母
40 g
牛油
400 g
砂糖

木薯粉
625 ml
椰汁
1/2 茶匙
黃金糕
  1. 細火煮椰汁,加鹽大煮約5分鐘,放入牛油熄火,放涼後加入木薯粉攪勻
  2. 乾酵母 加入30毫升溫水伴勻,待15分鐘發酵待用
  3. 另一大盆放入蛋、糖,用打蛋器打泡至奶白企身狀
  4. 椰汁粉漿和酵母水倒入蛋漿的大盆內,用打蛋器繼續打5分鐘或至混和,大盆賒接o酵倍大(約1小時)
  5. 發酵期間要不時打泡糊漿,分別打泡3至4次,目的令酵母跟糊漿平均混和
  6. 焗盤抹上牛油(不用放紙底),倒入糊漿再發酵倍大,放入200度焗爐,只用下火約焗15-20分鐘,最後3分鐘開上火,主要將糕面焗金黃。取出放涼後切件,黃金條紋清晰可見即成
